Of the five senses, the sense of smell is the most complex and unique in structure and organization. Odour can be measured using standardized methods that are objective, quantifiable,dependable, and reproducible. Unfortunately, odours have measurable parameters that are not generally understood. The basic odour parameters are odour strength (concentration) and odour character (standard descriptors). Odour strength and character can be measured/quantified in an odour laboratory from a ?whole air? bag sample that is collected at the odour source. Odour is measurable using scientific methods. Odour testing has evolved over time with changes in terminology, methods, and instrumentation. Odour terminology is linked to standard methods and the instrumentation used in these standard methods. A clear understanding of odour terminology is needed in order to discuss the uses of odour measurements. In this book, I have integrated the basics of odour, odour analysis techniques, sensors used for odour analysis and overview of odour measurement techniques.
